Method
Step 1 of 6
Place sea bass on a heatproof plate and top it with the sliced ginger.
Step 2 of 6
In a large work, set a round rack that will sit at least 3 inches above the bottom. Add 2 inches of water and bring to a boil. Set the fish in a heatproof plate that will fit in the work and steam for 10 minutes.

Then, drain the excess liquid off the plate. Cover the fish with julienned ginger, spring onion and coriander.
Step 4 of 6
Drizzle soy sauce and a dash of white pepper on the fish.
Step 5 of 6
Heat some cooking oil until slightly smoking then pour hot oil over steamed fish. Be sure to pour over all the greens.
Step 6 of 6
Sprinkle with more fresh coriander and serve.
